There are 2 types of Cocoa powder. Natural and Alkalized Cocoa Powder, the latter one also called Dutch-Process Cocoa Powder (Dutched Cocoa Powder). Natural Cocoa Powder is typically a pH lower than Dutch-Process Cocoa Powder compared to the same level of fat content.
The Natural Cocoa Powder with lower fat is very common in most markets and shops, however, that taste and smell is not so good and is generally used by many factories due to its lower price.
For the Alkalized or Dutch cocoa powder, the fat content has two levels, the 10 – 12% one and the 22 – 24% one. The higher the fat, the more expensive it is as the fat content is actually Cocoa Butter.
